Growing grass-fed and grass-fattened beef is one of our specialties. Beef cows are able to roam freely, eating healthy grass and enjoying fresh East Tennessee air and sunshine. We work to mimic nature, and using this natural model of grazing, we heal the land, clean up the waterways, produce healthier grass, and feed the earthworms - which all increase the meat quality. And of course, no steroids, no antibiotics, no growth hormones, no feedlots or grain finishing - ever.

The beef is dry-aged and hand-butchered the old fashioned way: by the Westmorland family in New Hope, TN, by men and women whose names we know, using knives, one beef at a time. It is a long, slow process; it takes 2 to 3 years to produce one beef - but we know you would not want things any other way. Cows are foundational to our farm. They produce compost for the gardens and shape the pastoral landscape in ways that no other animal can. All of our beef is raised on our leased farm here in the Sequatchie Valley. From birth to harvest, these animals have nothing but their mother’s milk, grass and clovers, and lots of clean water, air and sunshine. Absolutely no grains. No feedstuffs of any kind. And never any chemicals or antibiotics -- just pure simple beef, the way nature intended. We typically bring in 2-4 beef per month to a local USDA slaughter facility.
