Zucchini and Potato Fritters

These delicious fritters are a quick and easy way to enjoy the bounty of the seasonal harvest. Really tasty served with a dollop of sour cream and some fresh basil pesto.

Ingredients:

1 large zucchini

2-3 potatoes

2 eggs

2 tbs fresh oregano

salt and pepper to taste

1/4 cup of flour

1/2 cup shredded cheese

The important thing to remember is to shred the zucchini and the potatoes and then squeeze all the liquid out (an easy way to do this is place the shredded veggies in a cotton dish cloth and squeeze by hand over the sink. Then mix all the ingredients together and pre heat a skillet with a thin layer of your choice of cooking oil. Make patties by hand and cook in skillet until brown on both sides. Serve immediately.
