Dutch Baby

In our opinion, a dutch baby is one of the best breakfasts around! It's also known as a German pancake, and it's basically a family-style pancake with a custardy center. It uses our delicious pasture-raised eggs, and you can top it with pretty much anything. We like ours with yogurt, honey, sorghum and homemade preserves from the summer. 

Ingredients
1/2 cup milk
2 large eggs, room temperature
1/4 tsp salt
1/2 cup all purpose flour
4 tablespoons butter
Confectioners' sugar


Step 1: Preheat the oven to 425 degrees. Then whisk together milk, eggs and salt. Add flour and whisk until just combined. 

Step 2: Melt butter in a 10-inch cast iron skillet or other oven-safe dish over medium heat. Swirl the melted butter around the dish to coat it. Then pour the egg mixture in and let it cook for one minute without stirring. Put it in the oven and bake for 15 minutes. Lower the heat to 350 degrees and let it cook for 10-15 minutes longer until the top is richly golden-brown. 

Step 3: Dust with confectioner's sugar and serve immediately with any toppings you like!
