How Come we don't know the first thing about the flour that makes our Bread?

Our staple crops; our cereal crops matter. Think about it; they are the core, the base, of our diet and our communities, almost the whole, the entire source of our bodily energy. Wheat, rice, corn, rye, barley, oats, buckwheat…. Where would we be without these? Central to or health and ability to flourish as individuals, families, communities, and our language. Breadwinners bring in piles of dough or they are toast and have to eat the crumbs, fortunately a little bit of leaven is all that is needed to raise the whole loaf.

Grain and finance, grain and transportation, grain and development, grain and empire.

There is a whole uprising, not just in America, but all over the world, of plant breeders, farmers, processors, millers, malters, bakers, noodle makers, brewers, redefining our daily loaf. Already a decade ago Amy Halloran started her research that become a wonderful book - The New Bread Basket where she tells the story of regions in the nation bringing the grain chain process from field to plate back into communities. We are working on this for ours - NOw.
